Descriptive compound. Fuentes, locative plural of Latin fons, fontis ('fountain, spring'), applied to the concentration of subsoil springs of the place. De Ebro places the town on the riverbank of the eponymous river. The denomination is from the 13th century and describes the network of natural springs that fed the historical irrigation of the term, base of the onion and garlic agriculture characteristic of the place.

The municipal subsoil of Fuentes de Ebro contains one of the densest concentrations of springs in the middle Ebro valley: fourteen natural fountains documented from the 13th century that traditionally feed the irrigation. The agricultural activity of the place specialised from the 16th century in the cultivation of the sweet onion of Fuentes, local variety protected by Protected Geographical Indication (PGI) since 1995, of white flesh and characteristic mild flavour. The town is documented from 1118, year of the Christian reconquest of Zaragoza by Alfonso I the Battler.

Sweet onion of Fuentes PGI
Local variety of onion (Allium cepa) cultivated in the Fuentes de Ebro vegetable garden since the 16th century, protected by Protected Geographical Indication since 1995. It is characterised by a flattened bulb, white external layers, tender and juicy flesh, and sweet flavour without the characteristic pungency of other varieties. The cultivation surface is limited to 120 hectares of the municipal term with calcareous soil and irrigation from natural springs. Annual production: 1,500 tonnes.
